Herb and Garlic Cheddar Soup
A creamy and cheesy corn chowder made with our Sunny Dog Barkin' Herbs and Garlic Cheddar and lots of sweet corn. This is a great recipe for any time of year.
INGREDIENTS
1 cup of chopped onion
1 cup of chopped leeks
1 cup diced celery root
1 ½ cups of corn
1 litre of vegetable stock
1 cup shredded Sunny Dog Barkin' Herbs and Garlic Cheddar
1 cup of 35% cream
2 tbsp. of olive oil
Salt to taste
DIRECTIONS
Add 2 tbsp. of olive oil to pot and heat
Sauté onions and leeks
Add celery root
Add corn and sauté for 2-3 minutes
Add vegetable stock and bring to a gentle boil for 2-3 minutes. Let simmer for 20 minutes
Add in 35% cream and puree with emulsifier
Add in grated cheese
